Allergies can cause itchy palate because when the allergen comes into contact with the surface of mast cells or basophils in the mucous membrane of the palate, it causes the mast cells or basophils to degranulate and release large amounts of histamine and other mediators that stimulate the nerve endings in the mucous membrane of the palate to produce an itchy sensation.
