Anthocyanins, also known as anthocyanins, are the most widely distributed class of water-soluble pigments in nature and are widely found in the cytosol of flowers, fruits, stems, leaves and other tissues. Some studies show that anthocyanins have anti-inflammatory and antioxidant effects. 1. Anti-inflammatory: Anthocyanins can inhibit cellular inflammatory factors (such as tumor necrosis factor-α, interleukin, interferon γ, lipopolysaccharide, prostaglandin E2, etc.), up-regulation of tight junction proteins, and regulation of intestinal flora and other aspects of anti-inflammatory effects. 2.
