Probiotics are active microorganisms that are beneficial to the host. They are a general term for active microorganisms that are colonized in the human intestine and reproductive system and can produce definite health effects to improve the microecological balance of the host and play a beneficial role. The main beneficial bacteria or fungi in human body and animals are: Clostridium casei, Lactobacillus, Bifidobacterium, Lactobacillus acidophilus, Actinobacillus, Yeast, etc. At present, the most powerful products researched in the world are mainly the composite active probiotics composed of the above types of microorganisms, which are widely used in bioengineering, industry and agriculture, food safety and life and health fields. Prebiotics are non-digestible food ingredients that improve the health of the host by selectively stimulating the growth and activity of one or a few species of bacteria in the colony (Gibson and Roberfroid, 1995). A successful prebiotic should be one that is mostly undigested but can be fermented by the intestinal flora as it passes through the upper gastrointestinal tract. It is most important that it only stimulates the growth of beneficial flora and not harmful bacteria with potentially pathogenic or spoilage activity.
