Pig liver is not recommended for people with gallbladder stones. Gallbladder stones are mainly cholesterol stones or mixed cholesterol-based stones and melanin stones. The causes of gallbladder stones are very complex and are related to a number of factors. Any factor that affects the ratio of cholesterol to bile acid-phospholipid concentration and causes cholestasis can lead to the formation and further enlargement of gallbladder stones. Pig liver has a high cholesterol content and its consumption will cause an increase in the concentration of cholesterol in the bile, which is prone to precipitate cholesterol crystals and lead to the formation of gallbladder stones, therefore it is not recommended for patients with gallbladder stones to consume pig liver. Patients with gallbladder stones are advised not to eat foods with high cholesterol, such as pig liver, egg yolk and fatty meat.
