Corn is high in starch. Corn is the third largest staple food worldwide, after flour and rice. Fruit corn is a little lower in starch content, and glutinous corn is relatively high in starch content, but both are high starch foods. It is worth noting that more than half of the starch in corn is resistant starch, also known as anti-enzymatic starch and indigestible starch. Resistant starch is found in certain natural foods such as potatoes and taters. This starch is more difficult to degrade than other starches and is digested slowly in the body and absorbed and enters the bloodstream more slowly. It is good for increasing satiety, thus helping the body to control total calorie intake. That’s why corn is still considered a healthy food despite its high starch content.
