Waking up in the middle of the night with a dry and bitter mouth is mostly caused by dampness and heat in the liver and gallbladder (dampness and heat accumulated in the liver and gallbladder) or stomach heat.
1. Damp-heat of the liver and gallbladder: it is mostly due to the external infection of damp-heat evil or alcoholism, overeating fatty, sweet and spicy food, resulting in the internal growth of dampness, and the result of heat; or the spleen and stomach dysfunction, blocking the liver and gallbladder and the formation of liver and gallbladder damp-heat syndrome.
