Whether or not enoki mushrooms can be eaten after two days needs to be analyzed according to the situation. If purchased fresh enoki mushrooms have not yet been cooked and stored in a cool and dry place for two days, they are generally edible; however, if cooked enoki mushrooms have been stored for two days without being consumed, it is generally not recommended to consume them in order to avoid gastrointestinal discomfort. 1.
