Instant noodles are mainly made of wheat flour and fried, according to the Chinese food composition table, the GI of wheat flour noodles is 81.8, and GI>70 is called high glycemic food. Therefore, the glycemic index of instant noodles is high. Glycemic Index (GI) reflects the effect of food intake on human blood sugar. According to the level of GI, food can be categorized into high, medium and low categories, where food with GI value higher than 70 is high GI food, food with GI value lower than 70 and higher than 55 is medium GI food, and food with GI value lower than 55 is low GI food. Glycemic index is positively correlated with the carbohydrate content, number of times of processing and ease of digestion of food, and negatively correlated with the fiber content and fat content. Generally speaking, the faster the absorption, the higher the glucose content of the food, the higher the glycemic index. However, the final glycemic value of a food is also related to its intake. It is recommended that diabetic patients who need to control their blood glucose should choose their dietary regimen under the guidance of their doctors, and prioritize low-sugar foods to avoid blood glucose fluctuations.
