Prevention of cardiovascular disease involves reducing high cholesterol intake and eating as little as possible of high cholesterol foods such as animal offal, but protein intake needs to be ensured.
Eggs are a good source of protein, and although the yolk is high in cholesterol, it contains lecithin which has a preventive effect on atherosclerosis, and consuming no more than two eggs a day will not affect health.
Lard, for example, contains a large amount of saturated fatty acids and should be consumed sparingly.
The diet should be based on vegetable oils containing unsaturated fatty acids, and the ratio of animal oils to vegetable oils can generally be controlled at around 1:3.
