So is this really the truth? The fear of eating eggs began years ago with a rabbit experiment. In 1913, Russian pathologist Nikolai Anichko discovered that rabbits fed huge amounts of cholesterol would develop atherosclerotic changes in their bodies. This was the first time in human history that cholesterol intake was linked to heart disease. In 1937, two Columbia University biochemists suggested that if we could avoid egg yolks, we could prevent cholesterol from rising, and thus stave off heart disease. This study and its conclusions were widely publicized, and it was concluded that eating eggs would lead to higher cholesterol levels in the body, which in turn would cause cardiovascular disease, but there was a false premise in this study: rabbits are herbivores and do not eat any cholesterol in their diets, so their bodies don’t activate the regulatory mechanisms when they eat cholesterol. However, in human body, cholesterol in human blood circulation mainly comes from two ways, i.e., biosynthesis in the body and dietary intake, in which the synthesis in the body accounts for about 70~%80, and the dietary intake accounts for about 20~30%, and comparatively speaking, the proportion of dietary intake is very low. Moreover, human beings and other omnivores, have the ability to regulate cholesterol levels: more intake, the body will make less; less intake, the body will make more. Therefore, it is safe to tell people that eggs can be used without worry, especially the yolks can also be consumed normally, which will not affect the overall cholesterol level in the human body. For normal people, there is absolutely no need to worry about cholesterol overload when eating a whole egg every day. And those with higher cholesterol can also eat eggs, but in moderation, it is recommended to eat one every other day.
