Fresh shrimp + vitamin C ≠ arsenic

The fresh shrimp + vitamin C = arsenic is an old post, widely circulated, belonging to the “spinach contains high iron” and other common fallacies, online dissemination and refutation of the article are many, but unfortunately the latter voice is significantly weaker than the former, so moderate do some fried rice, pick up the work of the people or very necessary. Shrimp, crabs, clams, oysters and other seafood do contain elemental arsenic in their bodies, generally pentavalent, at a very small level, which can be rapidly excreted and is not harmful to humans. Theoretically, pentavalent arsenic and purified vitamin C through a complex chemical reaction, will be transformed into toxic trivalent arsenic (the so-called “arsenic”). However, the amount of vitamin C and pentavalent arsenic we consume at mealtime is very low, and the lack of a catalyst and proper reaction conditions does not create the possibility of arsenic. In fact, fresh shrimp + vitamin C poisoning is only anecdotal and has never been reported in the medical literature. In other words, excluding the decomposition of stomach acid, the detoxification of liver, and other related conditions for redox reaction to occur, when we eat at least 50kg of shrimp + 500mg of vitamin C (50 apples/30 pears/10 oranges/1.5kg of green leafy vegetables), it is only possible to die from arsenic poisoning if we are not burnt out.
