Diglyceride fatty acids are generally referred to as diglyceride fatty acid esters and are usually not trans fatty acids per se. However, it is possible to form trans fatty acids during application. Bis-glycerol fatty acid esters are the product of the condensation of glycerol and fatty acids. Glycerol has three hydroxyl groups, and the esters formed with two fatty acid hydroxyl groups are bis-glycerol fatty acid esters, while the fatty acid hydroxyl groups reacting with the glycerol may be trans, and thus there is a possibility that trans fatty acids may be formed. Trans fatty acids may be produced during the production of diglyceride fatty acid esters and should not be consumed in excess.
