Why do my palms turn yellow when I eat too many carrots?

Carrots are rich in beta carotene, the latter being a natural lipopigment of orange colour.
When a large amount of beta-carotene rich carrots are consumed for a long time, the beta-carotene content in the body exceeds the metabolic capacity of the body, resulting in a significant increase in the concentration of beta-carotene in the serum and tissues, thus causing the yellowing of the skin on the palm part of the hand, the symptoms of this yellowing of the palm are reversible and may subside as long as the carrots are no longer consumed.
